Historian, investigator and member of the Commission of Ethnology on the Andalusian Council for Historical Heritage. Member of Andalusian Library scientific committee for the compilation of the gastronomic heritage of Andalusia, the Traditional Andalusian Cuisine of IEAMED. Creator and president of GASTROARTE, the Andalusian Gastronomic Group and author of more than 30 books about ethnology and, specifically, Andalusian cuisine. He teaches Masters´ programs and expert courses in foodstuffs at several universities. Rapporteur and member of the judges’ panel for the main gastronomic meetings in Andalusia. Award for Investigation for the popular arts (1981) and the “Enrique Mapelli” Award for the Best National Review of Andalusian Cuisine (2010) from the Gastronomic Academy of Málaga.
